Recipe: Cucumber and Watermelon Salad

When out of balance, Pitta-types tend to be irritable and on-edge. Cucumber and watermelon cool the body and mind, soothing raw nerves. Add a dash of basil because “it improves circulation by stimulating and dilating the capillaries,” says Tomasko.
Serves: 4
Ingredients:
3 cups seedless watermelon, cut into bite-size chunks
2 cucumbers, peeled, thinly sliced
¼ cup feta cheese, crumbled
2 tablespoons olive oil
2 tablespoons orange juice
¼ teaspoon salt
¼ cup chopped basil
Directions:
Combine all of the ingredients, except basil, in a large bowl. Toss to coat. Let stand for 15-20 minutes before serving and garnish with basil.
